1️⃣ Phytates (Phytic Acid) Most common anti-nutrient in millets. Binds with minerals like: Iron, Zinc, Calcium, Magnesium. Reduces mineral absorption. 👉 Present in: Foxtail millet, Little millet, Finger millet, Pearl millet.

2️⃣ Tannins – Reduce protein digestibility, interfere with iron absorption, give slightly bitter taste. 👉 Higher in darker varieties (like finger millet/ragi).

3️⃣ Oxalates – Bind with calcium, excess may contribute to kidney stones. 👉 Present more in finger millet (ragi).

4️⃣ Goitrogens (in Pearl Millet) – Can interfere with thyroid function if consumed in very large amounts with low iodine. 👉 Mainly in pearl millet (bajra).
